Kadala Parippu (Chana daal) : 1 cup
Kaya(Plantain) : 1/2 cup
Vellarikka(Cucumber) : 1/2 cup
Kumbalaga (Ash gourd) : 1/4 cup
Sarkkara (Jaggery) : 1 cup (as required)
Coconut : 2 cup
Turmeric : 1/2 tsp
Pepper powder : 1/2-3/4 tsp
Chilly Powder : 1/4 tsp
Coconut oil : 3-4 tsp
First soak the parippu (daal) 1 hour and cook 3/4 th . Then cook the vegetables with pepper , chilly powder, turmeric, salt and little jaggery with enough water.
In a wide pan add coconut oil , once it’s hot add mustard seeds , red chilly and curry leaves. Then add coconut and add two pinch turmeric powder, fry until it’s golden brown. When the coconut turns brownish add left over jaggery and fry it until the oil dry off.When oil separates out clear add cooked vegetables and mix very well until it’s golden brown . When it’s well cooked oil visibly shows out on the recipe, your yummy Kootucurry is ready!
